Rice Crispy Chicken

This is a very simple and delicious recipe that I stumbled across a few days ago whilst watching the Food Network. It was a quick 1 minute clip of someone making a batch of baked Rice Crispy Chicken and it looked so simple that I had to give it a try.
I am quite a lazy cook when it comes to making meals for myself, and a bit of a fussy eater too so I tend not to bother that often but I love chicken and was up for a bit of experimentation.

All you need is some chicken breast fillets, mayo, and rice crispy cereal (or “rice pops” as Sainsbury’s call them). You can also add cheese and paprika to make it a bit more exciting but this is not essential. Simply dip the fillets in the mayo and then coat in the rice crispy cereal. It is a good idea to crush the rice crispies up a little so it can give a good coating, and add cheese and seasoning of your choice if you want to. Once coated just pop on a baking tray and bake at 200ºC for 20 minutes. It really is that easy and the results are delicious. And I imagine it can be quite healthy if you don’t serve it with cheesy chips like I did!
