Cheesecake Brownies

I have been a very bad blogger lately. The one line description I usually give of Through The Magic Door is “cake, crafts, and distractions aplenty”, but the last time any cake featured on this site was July. JULY. Disgraceful.

I am somewhat hoping to redeem myself. And what better way to do this, I thought, than with Cheesecake Brownies. That’s right, brownies…and cheesecake…together in one delightfully indulgent snack.

So I am forgiven, yes?

Cheesecake Brownies Recipe

For the brownies –
2 eggs
200g caster sugar
50g unsalted butter, melted
1/2 tsp vanilla essence
50g plain flour
3 tbsps cocoa powder
1/2 tsp baking powder
pinch of salt

For the cheesecake –
1 tub of cream cheese (10oz)
1/4 cup sugar
1 egg
1 tsp vanilla essence

  • To make the brownie batter – Whisk the eggs and sugar together until thick and creamy
  • Beat in the melted butter and vanilla essence
  • Sieve in the flour, baking powder, cocoa powder, salt and fold into the mixture
  • Pour into a well-greased square tin.
  • To make the cheesecake –  cream together the sugar and cream cheese. Mix in the egg and vanilla on a low-speed.
  • Drizzle over the top of the brownie mix. You can leave it as one separate layer on top or swirl with a knife to create a marble effect.
  • Bake at 170°C for approx 45 minutes, until the cheesecake has set but the brownies are still nice and soft.
  • Leave to completely cool in the tray before cutting.
