Today saw the first meeting of Exeter Baking Club in 2013. It was always going to be a challenge to find something exciting to bake right after the overindulgence of the Christmas period, but we came up trumps. As you may expect it ended up as a savoury themed meeting, and with cheese featuring quite prominently.
After struggling with ideas of what to make for a while, I found inspiration whilst watching television. The Hairy Dieters, to be precise. One of their shows featured an egg, bacon, and asparagus flan. It’s a bit like a quiche but with a filo crust and a lighter filling. I didn’t have any asparagus so threw some broccoli into mine instead, which worked out fine. I had a few tin issues, the main one being that I didn’t bake it in the correct type and therefore couldn’t get it out. So although the presentation side wasn’t all that, it tasted just fine (I didn’t actually get to try any myself but I was reliably informed of its tastiness).
