Chocolate Chip Cookie Dough Cheesecake Bars

I thought I had already posted this recipe, but apparently not! It’s something I made for Baking Club a few weeks back when our theme was Traybake, and I was very pleased to win Bake Of The Week with it!

Chocolate Chip Cookie Dough Cheesecake Bars…and yes, they are as delicious as they sound!

Recipe (I found this recipe somewhere on the internet but I now cannot find the original. I’ll keep looking and update this post with a link when I can. Next time I make this I will also weigh everything out so I can give the measurements in grams)

Biscuit base:
1 1/2 cups crushed digestive biscuits
5 tbsp melted butter

Cookie dough:
5 tbsp butter
1/3 cup light brown sugar
3 tbsp granulated sugar
1/4 tsp salt
1 tsp vanilla
3/4 cup plain flour
1 cup chocolate chips

10 oz cream cheese
1/4 cup granulated sugar
1 egg
1 tsp vanilla

  • Preaheat the oven to 160°C and line a (small-ish) square baking tray with greaseproof paper
  • Combine the melted butter and crushed biscuits and press the mixture into the bottom of the prepared tin. Bake in the preheated oven for 6 minutes. Remove from the oven but leave the oven on
  • While the crust is cooling, prepare the cookie dough by beating the butter, both sugars, salt, and vanilla until smooth. Mix in the flour and beat on a low-speed until well combined. Stir in the chocolate chips and set the mixture aside
  • To prepare the cheesecake, cream together the sugar and cream cheese. Mix in the egg and vanilla on a low-speed
  • Pour the cheesecake batter onto the biscuit crust
  • Place small, flat clumps of cookie dough on top of the cheesecake mix. Use all of the cookie dough to cover the cheesecake
  • Bake for 45 minutes. When you remove it from the oven, the cookie dough will not look fully cooked but that’s how you want it.
  • Leave to cool in the tin.
