Easter Recipe – Hot Cross Muffins

Hot Cross Muffins

As featured on the Easter Baking Bonanza post.


50g marzipan
225g plain flour
1tbsp baking powder
1/2 tsp baking soda
75g caster sugar
1 tsp mixed spice
175g mixed dried fruit
150ml semi skimmed milk
1 egg
50g butter, melted

  • Preheat the oven to 200°C and line a muffin tray with 9 paper cases
  • Thinly roll out the marzipan and cut into 18 thin strips (to be used later for the crosses on top)
  • In a bowl mix the flour, baking powder, baking soda, sugar, spice and dried fruit
  • In a separate bowl mix the egg, milk and butter
  • Add the milk mixture to the dry mixture and beat lightly until fully combined
  • Divide between the paper cases and top each with 2 strips of marzipan to form a cross
  • Bake for 15-18 minutes until golden brown
