Sweet Treat Sunday – Banana Mini Muffins with Cinnamon Icing

A few days ago I was flicking through various recipe books not knowing what to bake when I came across this recipe. I was a little apprehensive about giving it a go as I am normally not a fan of banana flavoured things and didn’t know if it was the best time to have my very first attempt at making muffins. But The Other Half piped up and said he would love nothing more, and seeing as I had all the ingredients in any way I gave them a go. And I am thrilled I did as they were an absolute taste sensation!! Now an absolute firm favourite of mine, they blew me away and if you give them a go (which I strongly suggest) I’m sure you will agree.


150g plain flour
1 tsp baking powder
pinch of salt
150g caster sugar
6 tbsps milk
2 eggs, lightly beaten
150g unsalted butter, melted
2 small bananas, mashed

For the Cinnamon Icing –

50g cream cheese
2 tbsps unsalted butter
1/4 tsp cinnamon
90g icing sugar

  • Place 12 large paper cases in a deep muffin tray
  • Preheat the oven to 200°C
  • Sift the flour, baking powder and salt together in a bowl. Stir in the sugar
  • Whisk the milk, eggs and butter together in a separate bowl until combined
  • Slowly stir into the flour mixture without beating
  • Fold in the mashed bananas
  • Spoon mixture into the paper cases and bake for 20 minutes or until risen and golden
  • Allow to cool completely before adding the icing

Icing –

  • Beat the cream cheese and butter together
  • Add in the cinnamon and icing sugar and mix until smooth and creamy
  • Chill in the fridge for 15 minutes before topping each muffin with a spoonful
