For the first Sweet Treat Sunday in a long time, I decided to try something I have never attempted before but have always wanted to have a go at. Shortbread.
The original inspiration for this was the recipe on the tv programme Baking Made Easy. That recipe however, calls for the use of rice flour which, annoyingly, I couldn’t find anywhere in the supermarket and had to leave out (I used just plain flour instead). I’m not exactly sure how that will have affected the recipe but the biscuits I ended up with were delicious anyway! I also made the slight mistake of not cooking them for long enough too, but only by 5 minutes or so and they were still very much edible!

60g caster sugar
190g plain flour
pinch of salt
