Sweet Treat Sunday – Vanilla Cupcakes with Dark Chocolate Orange Ganache

After failing to successfully make the cupcake frosting I wanted last week, I decided that this week I needed to tackle some other kind of frosting again and hopefully have a better outcome. For the first time I also made the larger size of cupcake, instead of the smaller fairy cake sized ones. I used the same recipe that I have always used but it obviously didn’t fill as many of the larger paper cases so it ended up making 7 big ones. I was perfectly happy with that though.

The Other Half is the one who suggested trying out a ganache and I thought it was a great idea. Using dark chocolate orange to make it was an interesting twist and it turned out beautifully. The absolute perfect topping for a cupcake. I’m also really looking forward to trying out other ganache recipes and flavours in the future, but for now I’ll just give you this one…


125g unsalted butter
125g caster sugar
2 tsps vanilla essence
2 eggs
150g plain flour
1/4 tsp baking powder

For the ganache:
200g dark chocolate orange, chopped
100ml double cream
100g unsalted butter

  • Line muffin tray with paper cases
  • Cream the butter and sugar together until light and fluffy. Add the vanilla.
  • Add the eggs one at a time, beating continuously.
  • Sift in the flour and baking powder and fold in.
  • Divide the mixture between the paper cases using two dessert spoons
  • Bake at 190°C for 20-25 minutes then allow to cool completely before adding ganache.

To make the ganache:

  • Place the chopped chocolate in a large stainless steel bowl
  • In a saucepan, heat the cream and butter over a medium heat, stirring frequently, until it just starts to boil.
  • Immediately remove from the heat and pour over chopped chocolate
  • Stir until chocolate is completely melted and mixture is smooth
  • Carefully pour over the cupcakes to the rim of the paper case.
  • Tuck in and enjoy 🙂
