Sweet Treat Sunday – White Chocolate and Orange Cookies

I cannot believe that this is the first Sweet Treat Sunday post in a month! I do not quite understand how I’ve let that happened so lets move swiftly on and allow me to present to you these mouth-wateringly delicious White Chocolate and Orange Cookies!

After the last batch of Chocolate Chip Cookies I made went down a treat with the family, it gave me the confidence to give them another go and I couldn’t resist trying these beauties out. Normally I am not a big fan of chocolate orange things but in this recipe it just works perfectly and isn’t too overpowering like I was worried it might turn out to be. The cookies themselves are also delightful, really soft and surprisingly light (you have to watch yourself and make sure you don’t end up eating half a dozen in one sitting!).

125g unsalted butter
200g caster sugar
1 tsp vanilla essence
1 egg
2 tsps grated orange zest
200g plain flour
1/2 tsp baking powder
pinch of salt
175g white chocolate chips

  • Preheat oven to 180°C and line baking tray with non-stick paper
  • Cream the butter and sugar together until light and fluffy
  • Add the egg and vanilla and mix well. Add orange zest and thoroughly mix in.
  • Sift flour, baking powder and salt into the butter mixture and add the chocolate chips. Mix until just combined.
  • Put tablespoon sized balls of dough on the baking tray about 2 inches apart and squash down slightly.
  • Bake for approx 9 minutes then leave on a rack to cool completely.

I made 12 cookies from this recipe, but they were quite big so you could probably get more than that.
